How do you play without updating?

I hear I need to play the old version of minecrat... no problem, I have the files. How do I run the game without it auto-updating? Or, more simply, how do I go from: Minecraft main folder + Separate older Minecraft folder = Play the game?

Also... I think the port changed and I didn't write it down? Sorry if this answered somewhere else, I couldn't find it. =)

Why do you need to play with an older version?

I am having the same problem, I have the "outdated bin folder" saved but when I open Minecraft it updates. Also, I can't replace the bin folder while Minecraft is running because it's in use. Help anyone?
